- Baking potatoes
- Butternut Squash
- 2 eggs
- Flour
- Butter for the pan
- Salt and Pepper
Cut the neck off from the butternut squash, peel and quarter it… peel and chunk the potato as well
In the food processor grate both the squash and the potato….
Remove from the processor and put them into a bowl… now add the two eggs and mix it all together… next add in some flour to make it all sort of stick together…
Next season with a dash of salt and pepper.. heat up a pan and add a little butter in it… next with your hands… it gets a little messy… smooch a ball of the mixture together and then pat to flatten it, place it in the frying pan … cook on medium to low heat until the cake is heated through.
then flip and brown each side of the cake… serve with Meyer Maple Syrup … delicious….
