This is a very simple, easily adaptable dish… I used what I had in the fridge and freezer, but you could add peppers to spice it up, any type of onion, add tomatoes if you don’t have salsa…
- 2 cooked chicken breasts
- 1 jar of salsa
- 1 chopped purple onion
- 10 corn tortillas
- 1 quart of frozen corn
- 1 can Garbanzo beans
- 1 cup shredded cheddar cheese
- 10 stems of fresh or frozen cilantro
In a stockpot… soften the onions with a little oil, about 7 minutes, then add in the chicken, salsa, corn, beans… cook it all until heated through….
Using the corn tortillas layer them in a 9×13 pan, adding the mixture from the stock pot, keep layering until it is all combined…
Top with the cheddar cheese and cilantro, and bake in the oven until cheese is melted about 15-20 minutes… enjoy!

This beautiful winter has seen many changes to the Harvest Patch Maple Woods…. Joe has been working daily up in the woods to add a new system that will improve of sap yields, making for more delicious Maple Syrup…
Last weekend Aliza got to make her first trip into the woods… she ate snow, played with tree branches and enjoy the crisp weather…
Grandpa is that you? When can I eat this maple syrup?
