I spent my whole car ride home today fantasizing about how I was going to make this pizza… I started with a delicious homemade crust that I rolled in cornmeal… it gives it a great crispness
Then I spread peanut sauce all over the crust and topped it with sliced carrots, purple onions, cooked chicken shaken in a spicy thai sauce, then layered on pumpkin seeds and sprinkled on some sharp cheddar cheese and coconut…. The picture does it no justice… and we started eating to fast to get a picture of the whole pie…

With the break of a near spring, which seems weird as we haven’t had one real winter snowstorm yet… it is maple syrup season time… and with this time it means lots of work to be done in preparing the sugar maple trees to give up all of their sweet sap….
My dad and I were working last weekend in the woods to fix a major line that will run to our new vacuum pump… check out me with the sweet basket backpack that holds all of the tools…
And with any good spring comes great amounts of mud… thank goodness for my yellow gumboots…
