Creating Christmas Cookie Class

Just got home for an awesome West Seneca Community Ed Class….

We baked

– two layer fudge

-cut out cookies

-ginger bread cookies

-ANZAC biscuits

– Easy layer bars

– Peanut butter balls, and dipped in chocolate

– and chocolate peppermint bark

Turkey Brine Bath

This great brine is a wonderful way to add extra flavor to your turkey…

The turkey should soak in the brine for about 24 hours… so start this guy on Wednesday morning, for Thursday Turkey Day…

You will need:

  • 16 cups of water
  • 5 apples
  • 1 orange
  • 14 peppercorns whole
  • 4 garlic cloves
  • 1 cup of Bourbon
  • 4 bay leaves
  • 2 cups of salt
  • 1 1/2 cup of dark brown sugar
  • 1 small onion chopped

Start by cleaning out the inside of your turkey….

then in a large 5 gallon pail, or a very large sauce pan, place the water….

next using a cirtus press cut the apples in half and squeeze them through the press, and then add the extra bits of mushed apple, the skin and seeds are fine to do in the pot…

Using a sharp knife peal off the orange skin into strips, and then sqeeze the juice into the pot with the cirtus press…

next add the salt, sugar, bay leaves, onion, peppercorns, garlic….

   stir it all together to make sure the sugar and salt are mixed in….

 

 then slip that little turkey into his over night bath….

 

after the little guy is in his bath pour a nice little topping of the bourbon over him…. then plastic wrap his lid so he may bathe in peace…

 

 

bathe happy little friend, sorry your little leggies are sticking out …

The end of a great CSA year

I was so sad today to deliver the last bag packed full of delicious goodies to last into the winter…. thanks to all of our members for making our CSA so wonderful… I will miss you over the winter, and look forward to seeing you next spring!!!

Beef Oreo

This is beef Oreo… We bought him at the Wyoming County Fair  4- H meat Auction…. Collin Reisdorf was the proud 10 year old that raised him… He did such a great job Beef Oreo weighed 1380 pounds…. Collin also received Reserve Champion for Beef Oreo, which means that he was the 2nd best animal and shower at the fair…

After we bought him we took some time to bond….

Then Beef Oreo was taken to the market to be turned into beef steaks, ground beef, t- bones, cube steaks, Porter house steaks, rump roasts, shoulder roasts, soup bones… and other delicious cuts of meat…..Thanks to Collin and the Reisdorf Family for raising such a great animal!!!

Fresh Strawberries and Jam

It all began with a lovely drive to pick some fresh strawberries……

And then home to wash them……

 

And then combine them with blueberries and raspberries to begin some triple berry jam….

and then to the stock pot to cook… I can not even describe the amazing scent that these berries gave off as they slowly cooked down in the pot….

All I could think about was getting to eat this as soon as it was finished cooking…. Doesn’t it look like a perfect 4th of July Jam with the Red and Blue….

As it was cooking down I prepared the Jars and lids so that everything was boiling hot and so that they jam would set properly!

And then there it is folk… The Middle Daughter Triple Berry Jam…..

The color is the most beautiful purple red, with bits of blueberries and strawberries and Raspberry seeds in it….

Joe plowed open the earth today, turned over some great soil to get the veggies growing… Did some hoeing in the onion patch today myself… All is looking grand… Planted some more lettuces as well…

 

Here a great tip:

I love having an out door patio potted garden, but don’t love to spend a ton of moola on beautiful pots, so I have a very nice collection of terra cotta pots all different sizes, and each year I invest in a new bottle of spray paint whatever color strikes my fancy; this year is a beautiful metallic silver, I then spray all of my pots with a fresh coat and just like magic you have a coherent look for a very low cost…

Herb-a-licious

Planted some more basil this evening… here is a great tip I like to start my herbs in  1/2 cracked open egg shells… this a a great way to reuse and then when you go to plant them outside you just put the whole thing in the ground and the sharp eggshells edges help to keep the slugs away from your herbs… I even planted mine in dyed eggs so pretty:)
