Perfect Potatoes

   The fresh Red Potatoes are ready to be dug…..

  Here is a super simple way I make a side dish out of them…

  Scrub them clean in the sink under water

  Fill a pot of boiling water and cook the potatoes until they are soft

  While they are cooking; in the food processor add onions, garlic, a little butter, and some of your favorite herbs…. in this picture I added basil, and cilantro….

 Blend up those, and then add the potatoes when they are done cooking, add some   milk to smooth them out and a touch of salt and pepper to taste…

  Done and done …. serve and enjoy!!!

Taco Dip Recpie

◊ Simple Taco Dip ◊

  • Sour Cream
  • Cream Cheese
  • Taco Dip Seasoning
  • Tomatoes
  • Cilantro
  • Peppers
  • Onions
  • Lettuce
  • Cheese
  • Hot Sauce

 

Mix the cream cheese and sour cream… add in the taco dip seasoning

Lay it in the bottom on the serving dish

Dice the Tomato, onions, cilantro, peppers , layer them on top of cream mixture

Shreed the lettuse , add it on top

Dash with hot sauce if desired

Sprinkle shredded cheese on top!!!

Use chips to dip and enjoy…

 

Simple Salad Dressing

With all the delicious Lettuces in your bags, I thought you might like a delicious Salad Dressing Recipe

  • You will need:
  • Quality Olive Oil
  • White Vinegar
  • Honey Dejion Mustard
  • Salt/Pepper
  • Any of the delicious Herbs from your bag… Thyme, Basil or Oregano this week

 

In a small dish put a tablespoon or so of olive oil and vinegar, then add a squirt of the mustard, dash of salt and pepper then chop up your chosen herb real fine and add it to the mix…. Stir it all together , and there you have it!

Happy Birthday to Darryl… and in celebration Double Peanut Butter Cookies

Mix the peanut butter a sugars together…

add the milk eggs and the vanilla

take a big ball of the batter and roll them out in to nice little flat circle……

after baking for about 8 minutes taken them on and while still hot and on the pan place a peanutbutter cup into the middle, allow to cool before eating:)

– Get excited CSA members these are for you at tomorrows pick up!!!

Super Strawberry Cupcakes

One must start with the butter and flour mixture… then whip the egg whites…..

Make sure they are whipped really well stiff peaks

Now fold the two together careful to not over mix…. you want the mixture to be fluffy…..

 

I like to use a rubber spatula to fold them together….

mine is orange but you cannot really see it among all that delicious batter!!!

Scoop 1/4 cup of batter into cupcake linners….

pretty pink ones for these strawberry cupcakes…

Then allow them to bake until a toothpick comes out clean….

A delicious completed batch… move them to a cooling rack until your ready to frost….

you just hang out here while I make the frosting….

In a double boiler on the stove top cook the egg whites and the sugar until the sugar dissolves… then take off the heat and whip the egg whites until stiff peeks form… cut in the butter, and fold in the strawberries

and there you have it folks… Super Strawberry Cupcakes….

and were they amazing… had a great cooking class this evening… the last class for West Seneca Community Ed for the year… thanks to everyone who attending the classes this Spring…

Here is a great recipe we made this evening…

Bruschetta

 

You will need:

2 tomatoes

Small onion

Minced garlic

salt

pepper

olive oil

balsamic vinegar

basil (fresh cut form the garden this evening:)

Mozzarella Cheese

Small crisp Bread

 

Chop tomato, and onion

add to bowl

add dash of oil and vinegar

mix together

Add Basil garlic and dash of salt and pepper

set aside

 

cut and lay out bread on baking sheet

cut mozzarella to lay on bread pieces

bake in oven until cheese is melted

 

Remove from oven and top with the Bruschetta mix

 

Delicious!!

Mama Meyer’s Green Beans

You can’t eat this recipe and not want more…

 

Mama Meyer’s Green Beans

 

You will need:

Fresh picked green beans

Bacon

Blue Cheese

Almonds/cashews/ pecans

 

Cook bacon in a saucepan

Turn off heat remove bacon

Save all the goodies

 

Boil a pot of water with a touch of salt

Snap the ends of the beans

Cook quickly in the boiling water

 

Remove beans from water

Add beans to the saucepan

Stir in blue cheese and bacon

Add any nuts you would like

 

Delicious!!!

 

Asparagus Tart

and with fresh asparagus needs to come an asparagus tart…

 

Fresh Asparagus Tart

 

 

You will need:

– Ready Made Pie Crust

– Fresh Asparagus

– Five pieces of bacon

– ¼ cup of feta cheese

– ¼ cup shredded cheddar cheese

-salt

-pepper

 

 

To Do:

-Roll out crust

– Cut into a square on a foil on a baking sheet

– Bake crust for 5 to 7 minutes

– Cut and clean asparagus

– Cook in frying pan the bacon

– Remove crust from the oven

– Use the bacon drippings to brush on the crust

– Sprinkle crust with the feta cheese

– Lay the asparagus in a pattern on the square crust

– Sprinkle in the bacon and cheddar cheese

– Bake in oven until the asparagus is tender

 

– Fast dinner tip-

For a faster cooking time, boil the asparagus in water first

Simply Celery Soup

Happy Tuesday to all….

Here is the recipe for the delicious light and very healthy soup from last nights class….

 

 

Creamy Celery Soup

Ingredients

2 tablespoons butter

14 large stalks of celery, sliced 1/2 inch thick crosswise

Celery leaves for garnish

1 cooking onion

1 baking potato, peeled and cut in 1/2 inch cubes

Coarse salt

Celery Seed

1 to 2 tablespoons fresh lemon juice

 

Directions

Heat butter in a large saucepan over medium heat.

Add celery, onion, and potato; season with salt.

Cook, until vegetables begin to soften, 8 to 10 minutes.

Add 6 cups water to saucepan; bring to a boil.

Reduce heat to medium, and simmer until vegetables are very tender, about 20 minutes.

Working in batches, puree soup until smooth

Return soup to pan; stir in lemon juice, and season with salt.

Serve, Fancy it up with celery leaves
