This is a very simple, easily adaptable dish… I used what I had in the fridge and freezer, but you could add peppers to spice it up, any type of onion, add tomatoes if you don’t have salsa…
- 2 cooked chicken breasts
- 1 jar of salsa
- 1 chopped purple onion
- 10 corn tortillas
- 1 quart of frozen corn
- 1 can Garbanzo beans
- 1 cup shredded cheddar cheese
- 10 stems of fresh or frozen cilantro
In a stockpot… soften the onions with a little oil, about 7 minutes, then add in the chicken, salsa, corn, beans… cook it all until heated through….
Using the corn tortillas layer them in a 9×13 pan, adding the mixture from the stock pot, keep layering until it is all combined…
Top with the cheddar cheese and cilantro, and bake in the oven until cheese is melted about 15-20 minutes… enjoy!

This burger was so delicious it was a good thing I got a picture of it before we munched them up… I love the taste of buffalo chicken wing dip and burgers and guacamole… and so I just thought they would be delicious all together…. Add a side of sweet potato baked fries and a dash of chipolte ranch… my oh my heaven …
- 1/2 pound of ground beef
- salt , pepper
- paperika
- chili flakes
- avocado
- fresh lime
- purple onions
- salt. pepper
- any other seasons you like in your guac
- 1/4 block of cream cheese
- Frank’s hot sauce
- blue cheese creamy
- Sweet potato
- olive oil
- cilantro dried
- salt, pepper
Ok many things needed for this delicious meal, but very worth it…
Start with the sweet potato fires they take the longest in the oven… oven at 400 … slice them thin to look like fries, toss them with the oil and seasoning… then lay them flat on a cookie sheet and bake for about 30 minutes flipping once…
Put the ground meat in a bowl and add the spices, mix it all together and then form it into burger patties… let them sit while you make everything else…
For the guacamole, half the avocado, remove the pit and then in a bowl combine the juice from the lime and the purple onion, add in the salt and pepper, I also usually add fresh cilantro and little red pepper….put this in the fridge so all of the seasonings can sink into the avocado…
Then place the cream cheese in a bowl and microwave it so it is soft…. add in the hot sauce to taste, and the blue cheese…
Next grill the burgers… prep the rolls while the burger cook… spread some of the guac on the top of the roll and the buffalo cheese mix on the bottom..
Place the burger on the buns when they are cooked… add any other toppings like lettuces or onions… remove the sweet potato fries and plate them… enjoy:)

You will Need:
One Small Squash
Circle Cookie Cutter
Salt, Pepper, Olive Oil, Thyme, Sage
Slice the squash into rings, then use the cookie cutter to cut out the middle where the seeds are… then in a bowl, toss them with the salt, pepper, oil, and herbs…..
Lay them flat on a cookie sheet and bake them for bout 30 minutes until they are soft, and slightly colored…

Start with:
- 1 bag frozen yellow or green beans
- 1 bag frozen shredded zuchini
- 1 bag frozen leeks
- 1 bag frozen cauliflower
- 1 chopped carrot
- ( I used quart bags to freeze all of my veggies this year)
- 3 chicken breasts fresh and chopped
- 1/2 cup of milk
- 1/4 cup chicken stock
- salt pepper
- one egg for egg wash
Crust:
- 2 cups of all purpose flour
- 1 teaspoon salt
- 4 tablespoons cold butter chopped
- 2-4 tablespoons of cold water
Chop up all of your chicken first… we are going to drop this into a saucepan of very high rolling boiling water for about 3 minutes… then it is cooked and still soft to add to the pot pie… once you have done this set it aside to make room for the veggies….
In a sauce pan add the bags of frozen veggies, they all have a little extra water in them becasue they are frozen so leave the lid off and then let them all heat up and the extra water evaporates off… this takes about ten minutes… perfect time to make the crust while they are cooking down…
Crust : Place the flour into a small bowl, add the salt, then using either two butter knives or a pasty blender cut in the cold butter… it will be a little bit crumbly… then one tablespoon at a time add the cold water… this is a mixing game until you get the right consistency … then roll it out into a piece big enough to cover your baking pan… you can use a cute cookie cutter to cut vent holes out too… mine are William and Sonoma pie cutter 4 in the set but the star is my favorite
Once the veggies are nice and soft remove them from the pan…. in the same pan add the milk and about 1/4 cup of flour to make it sorta thick… then add in 1/2 cup of chicken stock for flavor….once it is all warmed up toss in the cooked chicken and the veggies….
Let this all cook for a few minutes in the pot make sure it is not too runny… Remove from heat and pour into a baking dish
Now roll out the dough and if you want cut cute shapes out of it to let the heat out, or just make a few cuts with a knife… Take one egg and whip it up good in a small bowl, then brush it over the top of the crust, this make the crust all nice and shinny
Bake for about 30 minutes

This was a very Fancy Dinner for the Howe Family…. A Seafood Treat
Lobster Tail – Remove the upper of the lobster… squeeze fresh lemon and roast in the own for about five minutes at 400 degrees
Remove and using kitchen sissors slice up the middle of the tail and bend to push the meat out… Serve with melted butter and lemon!!!
Crab Cakes
8 oz. of fresh crab
1/2 cup panko bread crumbs
one squirt Dijon mustard
splash of Worcester sauce
Salt and pepper to taste
– Mix all of the ingredients except for the crab in a small bowl, once they are incorporated then fold in the crab meat carefully so to keep the nice clumps…
– Using your hands make small balls from the mixture and then form them into little cakes
– In a small frying pan melt a tablespoon of butter and fry the cakes for 3 minutes on each side
– Serve with spicy Thai chili sauce
Lobster Crab Bisuqe
melt 2 tablespoons of butter in a sauce pan
add 1/2 cup of leeks, 3 stalks of celery chopped and one small onion chopped
cook until soft
then add in 2 cups of heavy cream and one cup of milk
add in lobster and crab meat, I just used what meat I had left from the lobster and the crab maybe a cup in total
cook down add salt and pepper to taste

- Baking potatoes
- Butternut Squash
- 2 eggs
- Flour
- Butter for the pan
- Salt and Pepper
Cut the neck off from the butternut squash, peel and quarter it… peel and chunk the potato as well
In the food processor grate both the squash and the potato….
Remove from the processor and put them into a bowl… now add the two eggs and mix it all together… next add in some flour to make it all sort of stick together…
Next season with a dash of salt and pepper.. heat up a pan and add a little butter in it… next with your hands… it gets a little messy… smooch a ball of the mixture together and then pat to flatten it, place it in the frying pan … cook on medium to low heat until the cake is heated through.
then flip and brown each side of the cake… serve with Meyer Maple Syrup … delicious….

Everyone seemed to love last weeks bonus item so here is the recipe:
Can I please add to this a visual of me making these in my kitchen… Aliza and I got home and all the lights in the kitchen were working , but the microwave clock was off and the radio clock was off… and then I tried to plug in the mixer to mix the sugars and such and none of the outlets would work along the counter… so we have a double outlet that is on the light switch which is right next to the door to the house, which I have always thought is so weird, becasue who really needs an outlet next to the front door, becasue it is over the garbage cans and not near a flat surface… so I pull a kitchen chair over and then drag the kitchen aid mixer over to the chair to cream the butters together… please note that Darryl is not home… so before these extreme measures I did check the fuse box and nothing was blown… so I made these cookies on top of a kitchen chair… glad they turned out so good..
1 c. butter, softened
1 c. vegetable oil
1 cup sugar
1 c. confectioners’ sugar
2 eggs
1 tsp. vanilla
1 package (3.4 oz) vanilla instant pudding mix
4 c. all-purpose flour
1 tsp. cream of tartar
1 tsp. baking soda
In the mixer, cream the butter, oil, and sugars for 4-5 minutes.
Beat in eggs, vanilla, and dry pudding mix.
Combine the flour, cream of tartar, and baking soda; gradually add to creamed mixture.
Roll into balls and place onto parchment paper on cookie sheets. Slightly flatten with the bottom of a glass dipped in sugar. Bake at 350 for 8 – 10 minutes or until very lightly brown around the edges.
Remove from oven and place on a cookie rack
Delicious!!!

With Fall upon us and the last of the fresh tomatoes and peppers of the season give this delicous chili a try….
Find a great IPA beer for the recipe at AURORA BREW WORKS… 191 main street East Aurora….
Hardy Beer Chili
- 1 pound ground beef
- 1 pound ground pork
- 1 can of Red Kidney Beans
- 2 small onions or leeks
- 3 small bell peppers
- 2 small hot peppers
- 2 cloves of garlic
- 10 tomatoes
- Bottle of beer (Bourbon based dark IPA)
- 1/2 cup of honey
- 1/2 cup of molasses
- Red pepper
- Cumin
- Black pepper
- Salt
Brown the meat first in some olive oil …
Chop all the veggies in a large bowl
Add the veggies to soften up,
Add in the spices
Let it cook down for about an hour!
While it is cooking make some corn bread to go with it:)

- one small eggplant
- one large yellow tomato
- flour and egg white for dredging
- salt and pepper for taste
- butter for pan
Slice the egg plant into half an inch thick slices
Then take two plates to make a mini dredging station… one with the egg white on it, the other with flour on it…First dip the slices into the egg white and then coat them in the flour…
In a pan on the stove put about a tablespoon of butter to let melt…
Now make thin slices of the yellow tomato…
In the pan on the stove place the yellow tomatoes on the bottom, and lay the eggplant on top… let them heat together for about a minute, and then flip them over so the eggplant is on the bottom and in the butter, let it get a nice crispy coating on it….
Let them all cook together on low to medium heat, until the eggplant it nice and soft… the tomatoes will almost sort of melt into the eggplant as they are much softer to start and cook down quicker
Sprinkle with salt and pepper to your desired tastes…
Remove and enjoy!!

- Red Potatoes
- 1/2 cup of ricotta cheese
- 1 medium leek
- salt/ pepper
Take and peel the red potatoes, then cube them up, and boil in water until they are nice and soft…
After boiling drain water and then with a stick blender puree the potatoes…
Chop up the leeks and take a scoop out the ricotta
Blend them all together…
served with pulled chicken sandwich and carrots.. yummy
